Green Papaya Salad

I have wanted to make this salad for years, but haven't been able to find green papaya. Finally, yesterday, I visited a new Asian market that opened up in Spotsylvania and not only did they have green papaya, it was already shredded. Woo-hoo! This salad was super easy to make. I omitted an ingredient....dried shrimp (I can't take the intense flavor). Other Green Papaya Salad recipes I found included cherry tomatoes and/or green beans in the salad. The next time I make this salad, I will probably add chopped cilantro and/or Thai basil.
Green Papaya Salad
1 small unripe green papaya, peeled and thinly shredded
1 large carrot, peeled and thinly shredded
salt and pepper
lettuce leaves
crushed peanuts
Dressing:
1 clove garlic, chopped
1 shallot, chopped
2 small red or green chiles, seeded and chopped
2 tsp. sugar
3 T. lime juice
2 T. fish auce
Mix the shredded papaya and carrot with salt and pepper. Arrange on a bed of lettuce leaves on a serving dish and pile the papaya and carrot on top. For the dressing, using a pestle and mortar, pound the garlic, shallot, chiles, and sugar to a fine paste. Blend with the lime juice and the fish sauce to make the dressing.
Garnish the salad with the crushed peanuts and pour the dressing over it. Toss the salad as soon as you are ready to serve.
Makes 4 - 6 servings.

Greek Salad

This is a yummy salad. I don't follow this recipe to a tee. I just start chopping and adding veggies. The last time I made this, I didn't have kalamata olives, so I just added regular ol' black olives. I also added green bell pepper (diced). I like to add some croutons to the salad for a little crunch. The lemon dressing is a favorite of mine.
Greek Salad
romaine lettuce, cut into 1" pieces
1 medium cucumber, peeled, seeded and dicediced
1 medium tomato, chopped
1/2 cup red onion, chopped
1/4 cup kalamata olives, chopped
1/8 cup pepperocini peppers, stem removed, seeded, and chopped
1/3 cup crumbled feta cheese
1/4 cup fresh lemon juice
1/4 cup extra virgin olive oil
1 - 2 cloves garlic, minced
pinch of oregano
salt and pepper to taste
Combine lettuce, cucumber, tomato, onions, olives, pepperocinis, and feta cheese in large serving bowl.
Whisk together oil, lemon juice, garlic, oregano, salt and pepper in a small bowl. Pour over the vegetable mixture; toss until coated. Serve immediately.
Monkey Bread

I made this for breakfast recently and we really enjoyed it. This is very much like cinnamon rolls, but much easier to make.
Monkey Bread
2 can refrigerated biscuits
1/3 cup sugar
1/2 teaspoon cinnamon
In a small bowl combine sugar and cinnamon.
Separate biscuits, and cut each one into 4 pieces (a pair of kitchen shears works really well for this).
Place a few biscuit pieces at a time in the cinnamon/sugar mixture, and toss to coat thoroughly. Evenly distribute the coated biscuit pieces into a greased bundt pan.
1/3 cup sugar
1 /2 teaspoon cinnamon
2 teaspoons vanilla extract
1/4 cup butter or margarine
Place these ingredients in a small saucepan over low heat, and stir until butter is melted and all
ingredients are thoroughly combined (DO NOT BOIL). Drizzle this mixture evenly over the biscuit pieces.
Bake at 350 degrees for 20 minutes, then immediately turn out onto serving plate. Let cool a few minutes before eating.
