Red Hot Blues Nachos with Goat Cheese
last month i wrote about eating these nachos at continental divide in charlottesville, virginia. i have made them a couple of times at home with great ease and delicious results.
to make red hot blues nachos with goat cheese:
melt grated monterrey jack cheese on top of garden of eatin red hot blues tortilla chips. when the monterrey jack is melted, top with a bit of crumbled goat cheese and serve immediately.
these nachos are so addictive. the creaminess of the goat cheese really balances the mild spice from the chips. very nice.
strawberry milk
my 4 year old is a very pickly eater. getting him to eat fruits and vegetables has been a huge challenge. my son loves strawberry milk and often asks for it.
berries are very nutritious (rich in antioxidants and bioflavonoids) and by making strawberry milk, i can sneak a serving or two of fruit into my son.
for the strawberry milk, i blend:
one of these days i'm going to make blueberry milk just to see if my son likes that too. blueberries are also very healthy.
