today, i spent most of the day in the kitchen. this morning, i made a big batch of spaghetti sauce chock-full of garlic and baby bella mushrooms. i let that simmer on the stove for a couple of hours and then divided into containers to put in the freezer for later use. while the spaghetti sauce was simmering, i threw together a loaf of plain white bread in the bread machine. actually, my 3 year old added the ingredients and pushed the buttons. he also ate half of the loaf when it was done. i made a peanut butter and blackberry jelly sandwich with the fresh bread for lunch....yum! for dinner i made falafel (i cheated and used a box mix by fantastic foods). i also made hummus and a tahini sauce to go with the falafel. i served it all with pitas, lettuce, tomatoes, cucumbers, and black olives. it's one of my very favorite meals.
hummus
blend all ingredients in a food processor. add olive oil and water -a little at a time- to get desired consistency. you can add other ingredients for something a little different. my favorite addition is cilantro.
